Farro is an ancient grain widely used in traditional Umbrian cuisine. Rich in fiber and low in fat, it’s ideal for those looking for light and healthy meals during the summer or after a day spent outdoors exploring medieval villages, scenic trails, and local food tastings.

Umbrian Farro Salad Recipe

Ingredients for 4 servings:

  • 250 g of pearled Umbrian farro

  • 2 ripe tomatoes

  • 1 cucumber

  • 1 carrot

  • 1 bell pepper (red or yellow)

  • Black olives (optional)

  • Fresh basil

  • Extra virgin olive oil from Umbria

  • Salt and pepper to taste

  • 1 tablespoon apple cider vinegar (optional)

Preparation:

  1. Rinse the farro and cook it in lightly salted water for about 20–25 minutes. Drain and let it cool completely.

  2. Wash and dice all the vegetables.

  3. In a large bowl, mix the farro with the vegetables and torn basil leaves.

  4. Season with extra virgin olive oil, salt, pepper, and—if you like—a tablespoon of vinegar.

  5. Let it sit in the fridge for at least 30 minutes before serving, so the flavors blend nicely.
